Angel Hair Pasta with Scallops

This recipe is delicious and easy. Who doesn’t love pasta? We especially love this recipe because it’s nice and light, not your typical heavy, creamy pasta. This recipe utilizes our amazing large scallops, available at the store in our frozen seafood freezer for $20.00/Ib
Ingredients

- angel hair pasta
- frozen scallops
- cherry tomatoes
- fresh garlic
- red onions
- butter, salt, pepper
- white wine
- fresh lemon
Cooking Instructions
- Remove your scallops from the freezer and thaw prior to cooking, you can thaw them out in a baggie in some cold water if you’re rushed. We’d suggest 4-5 scallops per person for the pasta
- Prep your veggies, quarter your cherry tomatoes, mince the fresh garlic and dice the red onions into small chunks
- Heat butter (be generous.. ) in a pan on medium heat, cook onions for roughly 4-5 minutes, until soft and golden. Add your minced garlic and continue to cook for one minute
- Add your scallops into the pan and sear 4 minutes a side, or until cooked throughout, getting a nice brown crust on the outside of the scallops
- While the scallops are cooking boil your pasta
- Once the scallops are cooked, deglaze your pan with some white wine, cooking everything for an additional minute or two to burn the alcohol off, throw in your cherry tomatoes right at the end
- Plate your pasta and place your scallops and veggies on top of the pasta, squeeze some fresh lemon over the plate before serving
